i can't help but read into this story of a beautiful tree destroyed by human malice an analogy for the US

Yes!--and I also read into it an analogy of people of goodwill in cooperation with a regenerative natural force, allowing something new and beautiful (but different) to grow from the roots of what was destroyed. May we, too, have hope...

I'll never understand the psychology of someone who would destroy such a magnificent life as that sycamore tree. What a desecration.

Good question: the psychology of someone who would destroy that which has been magnificent. And treasured by all but the one person who destroyed it. Did that person recognize how magnificent and treasured that tree was, and couldn't bear the competition? Helluva twisted psychology.
